
CSC: a battle to defend the Italian Espresso
The Associazione Caffè Speciali Certificati has undertaken the battle to defend the peculiarities typical of Italian Espresso and to obtain international recognition of specific tasting techniques. Anyone buying coffee for use as espresso should buy coffees classified for preparation “in espresso” and not for “in infusion” as instead has been the case to date. For this reason CSC in collaboration with LabEspresso have created a cupping form specifically for espresso.
Together with BSCA Brazil Specialty Coffee Association, has organized the first tasting prize dedicated to Caffè Espresso. "Tasting or cupping? Either options are possible” CSC’s chairmanEnrico Meschini says "tasting is typical of who loves to savor his coffee cup in a non-professional way; cupping results from the activity of a pro who evaluates physical and organoleptic features of coffee. Espresso tasting only needs to be held by passion; Espresso "cupping" needs a deep knowledge instead.”
